If a product is out of stock, there's no need to leave this screen:

when confirming the line, there's a "Short" field where you enter how much couldn't be picked,

or tap "All" if there's nothing left.

The other option is to substitute:

tap "Substitute" to see alternative products, with their SKU and whether there's stock.

Picking one replaces it right away, with no extra steps.
